Do you mean master or metronome ?
 
For master just a left clic on the red master knob arrow, and then drag to the desired volume
 
For metronome right clic on the metronome (play tool), clic "edit" then "change instrument" and on top of window you find "volume"

 These are very many small exercises.  
   
 
I'm looking for the setting that I can define the volume for all songs.
At the moment I have to adjust the volume for each song.
 
Is there a way to define the volume for all songs in the global settings?
All songs / exercises I open, it should always have the same volume.
 
 Do you understand what i mean?

The attachment shows where in the General configuration you can set the metronome defaults.
 
As for setting the volume, I believe it would depend on what you are playing back.  If you export the file as MIDI or MP3, I believe there is an option to normalize the volume.  If you are playing .MUS or .MYR files, my guess would be that if you create all your scores using the same template, the master volume should be the same.  In either case, the dynamic markings you've added to the score would adjust playback volume up or down as indicated.  (Mezzo-forte is 100% of the notes' dynamic level, mezzo-piano is 80% and mezzo-forte 120%, and so on.)

Try using Configuration>Global Setup to add a keyboard shortcut to the Edit>Actions>Change Velocity command.  This will allow you to modify the base volume for all notes selected when you invoke the command.  The default setting is 64.  You can also edit the velocity for each note individually, but this is much easier for affecting, say, the entire score.
